Banquet menu
We take pride in serving dishes made from local and seasonal produce. All of our menus are developed with that in mind.
Our local suppliers are among others: Cabbage, potatoes, onions and leeks from “Klippingegård”, meat from pigs living of apples at “Envang Frugt”, where we also get apples and berries and our rabbits from “Alt godt fra haven”.
All of them local suppliers growing and breeding food right here on Stevns
SPRING – april to june
- Asparagus with fjordrejer (a danish speciality shrimp) & vinaigrette with eggs
- Slowcooked veal culotte served with cabbage, potatao and leek pie & sauce bearnaise
- Pickled ruhbarb with nut crumble and homemade vanilla ice cream
SUMMER – july to september
- Stirred crab salad with langoustine, herb oil & afran aioli
- Steak from wholeroasted beef served with fresh summer vegetables, redwine glace & pommes anna
- Danish strawberries with chocolate crumble & elderflower sorbet
AUTUMN – october to december
- Cold herbal poched cod served with herb mayo & quail egg
- Pork belly with butter sauteed dansih corn, baked onion, thyme glace & roasted petit potatoes
- Hasselbaked apples with cinnamon & nuts served with white chocolate ice cream
WINTER – january to march
- Stenbidderrogn (danish speciality caviar) served with cold mashed potatoes, pebber mayo, crisps, leek & crest
- Braised veal brisket with pickles made this summer, fumet & pommes duchesse
- Chocolate truffel with caramel, pickled berries and raspberry sorbet
All starters are served with homemade bread made with organic flour from “Brinkholm” and whipped butter.

- Tartar made from smoked salmon with herb mayo & crispy rye

- Pumpkin soup seasoned with chili, served with pancetta

- Confit rillette made from duck with pickled onions, herb mayo & parsnip crisps

With crispy rind, red cabbage made traditionally , pickled cucumber, homemade mayo & brioche bun - ”Charcuteri & cheese”
